Chile peppers have been cultivated all over the world for centuries. Here are some common chilies you ought to know.

The Poblano

A good, easy-to-find grilling pepper that’s ideal for stuffing to make chiles rellenos. Poblanos get fairly big and are usually sold fresh, while they are younger and dark green. At their red, mature stage they are usually dried. They have a good flavor, with enough spark to be zesty but won’t scorch anyone.


The Jalapeño

The jalapeño is probably the best-known pepper in the States. Harvested at both its green and red stages, the jalapeño is spicy. When dried and smoked, it’s called a chipotle chile. More spicy than the poblano.


The Habanero

The spiciest on our list, this little pepper packs a lot of heat. Habaneros add a lot of heat to the recipe. Use with caution! They come in different colors – orange is the most common.
